Ingredients
  1. 4 Lamb chops with Bone in
  2. 1 TBsp olive oil
  3. Smoked Paprika (about 1 TBsp) and salt and pepper to taste
  4. 4 shallots sliced thin
  5. Black olives (with the pit)
  6. 4 Roma Tomatoes, quartered
Instructions
  1. Bring Lamb chops to room temperature and dust each side with paprika, salt and pepper
  2. Heat a cast iron grill pan on medium high heat. Add 1 TBsp olive oil, when hot, place lamb chops in pan. Sear all sides of the chop to brown it.
  3. Turn heat down to low, add shallots. Put a lid on the pan and cook for 8 mins for rare chop, longer for desired doneness.
  4. Move chops to individual plates (or serving plate) to rest.
  5. Add tomatoes and olives to the hot pan. Stir to coat all sides of the tomatoes and olives and mix in with the shallots. Tomatoes and olives should "wilt" slightly before serving.
  6. Serve shallots, tomatoes and olives to the side of the chop.
Notes
  1. Buy lamb chops at Costco in bulk and freeze in desired serving size. This is a great go-to company dinner. Serve with a green salad, or other green vegetable, I especially like cooked spinach, and crusty bread.

Ingredients
  1. One acorn squash - as symmetrical as possible
  2. 2 pats of butter
  3. 2 TBsp Maple Syrup
Instructions
  1. Slice Acorn Squash in half around the middle
  2. Spoon center seeds and pulp into trash
  3. Mircowave (cut side down) for 6 - 8 mins. Squash should feel slightly soft to touch, but not mushy.
  4. Turn over on a baking pan, or into an oven proof dish if squash will not stand on baking pan
  5. Finish baking in a 350 degree oven for 10 mins; place 1 butter pat and one Tablespoon of syrup in the cavity of each half. Transfer carefully to serving plate.
Notes
  1. Eat with a spoon and try not to break the outer skin of the squash, otherwise you'll lose all the good stuff, butter and syrup.
