Company Lamb Chops

Ingredients
  1. 4 Lamb chops with Bone in
  2. 1 TBsp olive oil
  3. Smoked Paprika (about 1 TBsp) and salt and pepper to taste
  4. 4 shallots sliced thin
  5. Black olives (with the pit)
  6. 4 Roma Tomatoes, quartered
Instructions
  1. Bring Lamb chops to room temperature and dust each side with paprika, salt and pepper
  2. Heat a cast iron grill pan on medium high heat. Add 1 TBsp olive oil, when hot, place lamb chops in pan. Sear all sides of the chop to brown it.
  3. Turn heat down to low, add shallots. Put a lid on the pan and cook for 8 mins for rare chop, longer for desired doneness.
  4. Move chops to individual plates (or serving plate) to rest.
  5. Add tomatoes and olives to the hot pan. Stir to coat all sides of the tomatoes and olives and mix in with the shallots. Tomatoes and olives should "wilt" slightly before serving.
  6. Serve shallots, tomatoes and olives to the side of the chop.
Notes
  1. Buy lamb chops at Costco in bulk and freeze in desired serving size. This is a great go-to company dinner. Serve with a green salad, or other green vegetable, I especially like cooked spinach, and crusty bread.

Acorn Squash- a lovely winter side dish

Ingredients
  1. One acorn squash - as symmetrical as possible
  2. 2 pats of butter
  3. 2 TBsp Maple Syrup
Instructions
  1. Slice Acorn Squash in half around the middle
  2. Spoon center seeds and pulp into trash
  3. Mircowave (cut side down) for 6 - 8 mins. Squash should feel slightly soft to touch, but not mushy.
  4. Turn over on a baking pan, or into an oven proof dish if squash will not stand on baking pan
  5. Finish baking in a 350 degree oven for 10 mins; place 1 butter pat and one Tablespoon of syrup in the cavity of each half. Transfer carefully to serving plate.
Notes
  1. Eat with a spoon and try not to break the outer skin of the squash, otherwise you'll lose all the good stuff, butter and syrup.

Ingredients
  1. 3 Haas avocados
  2. 1 large, or 2 small shallots, minced
  3. 1 Medium Fresh Tomato, petite dice
  4. 2-3 Tablespoons of Pepper Plant hot sauce
  5. 1 Lemon, juice
  6. 1 Pinch of salt
Instructions
  1. Mash Avocados until mix of creamy and chunky
  2. Add Salt and Pepper Plant
  3. Stir, while keeping most
  4. Fold in shallots, tomatoes and lemon juice

Life is short; don’t spend it in the kitchen

I first started the thought process for 6and20.com when my dad, in his late 80’s had to take on duties in the kitchen from my mom.  I started with simple menus and quickly realized that he had never shopped, and had no idea of the things he should have on hand for the simplest of meals, nor did the house have any spices!  To the menus, I added lists of staples, weekly grocery lists and the most frequently needed spices.  As I made these available to Dad, my nieces and nephews asked for copies, and eventually my friends.  So this is the first posting for 6and20.com – the site a gift from my dear friends Dan and Mel.

As a long time corporate plonk, time has always been short.  As a cook I’ve gravitated to dishes that require few ingredients and the minimum of time.  Not that I don’t enjoy cooking, and especially eating, but living in northern CA wine country there is always something more interesting to do than spend time in the kitchen.  My goal for this site is to share what I hope is the best of my kitchen.  Initially I’ll attempt to provide the basics of getting around a kitchen and pantry.  Gradually I’ll add recipes made from 6 ingredients and requiring less than 20 minutes cook time, that I’ve tested and used for simple, tasty meals.

I’d be happy to receive feedback, suggestions and reviews.  You may not like the same things I do, and in fact I’ve “tweaked” most of the recipes as I try and retry them.  If you come up with a great addition or substitution, I’d be happy to hear from you.  So, we’re off…
